FISH SAUCE SALMON

Every year, Nick catches too many small fish whose fillets are thin and cook quickly, often lake trout or pink salmon, fish that are certainly not above the help of rich sauces and bold flavors. This dish was inspired by the fish sauce wings at Pok Pok in Portland and has since become our go-to preparation for cheap and otherwise mild-tasting fish. It also works well with cod or tilapia. Serve with Savory Fruit Salad (p. 196) or a bit of steamed rice and lightly dressed greens.

SERVINGS

½ cup (125 mL) fish sauce

¼ cup (60 mL) honey

2 tsp Sriracha sauce

2 garlic cloves, smashed

2 1-lb (500 g) salmon or trout fillets, about ¾ in (2 cm) thick

1 tsp toasted sesame seeds

2 scallions, finely chopped
